Good morning! It’s Friday and I’m so happy the weekend is here. Darin and I have a date to explore the city Saturday night so I will be posting findings next week. Also, be on the lookout for a giveaway on Monday! Winners will be announced next Friday. Here’s my June Salad-A-Day challenge from Oh She Glows.
I bought a Greek Salad from a fresh market in the area- feta cheese, olives, cucumber, tomatoes and grilled chicken with balsamic vinegar. It was so good and filling.
Fitness
It’s Fitness Friday and I have a Sundress Workout for you. I know most of you have probably pulled out your sundresses for the Summer and are sporting them with those hot arms. Let’s make them look even better.
I started off with a 10 minute treadmill warm-up followed by this workout:

Kettle Bell Sumo High Pull ** You can also use weights
Chest Fly ** I did on a stability ball
Follow this up with another 10 minute cardio session and then stretch those muscles!
Flavor
This morning I’m bringing you one of my favorite recipes.
Cinnamon Coconut Granola
the makings
(4) cups of rolled oats (non-instant)
(1) cup of shredded coconut (sweetened or un-sweet)
(1/3) cup of honey- adjust to sweetness you prefer
(1) cup of sliced almonds
(4) tbsp of coconut oil
(1/2) tbsp of ground cinnamon
(1) tsp of sea salt
** If you don’t like coconut in general, you can substitute another form of cooking oil and not add the coconut flakes.
Steps
Preheat the oven to 350 degrees.
Heat your stove to low-medium heat and melt the honey and coconut oil together.
In the meantime, mix almonds, oats, cinnamon and salt together.
Pour the oil into the dry mixture and mix well.
Grease your baking sheet with a little bit of coconut oil to prevent sticking and then pour the oat mixture onto the baking sheet. Place in the oven and set your timer for 10 minutes.
After 10 minutes, take the oats out of the oven and stir. Then place the pan back in the oven for another 10 minutes.
Take the oats out and add coconut, stir and bake for a remaining 5 minutes.
Take oats out of the oven and cool!
I ate mine with blueberries, blackberries, and coconut milk- yum!
